For the longest times I have wanted to make biscotti cupcakes. I searched for ages but couldn't find
a simple recipe. I eventually found one, and wanted to share the recipe with you all so you can
make your own cupcakes. I definetly am not a professional baker, hense why these don't look
visually appealing, however they did taste delicious if I do say so myself.

CUPCAKES
200g butter
200g caster sugar
200g self raising
50g plain flour
100g Lotus biscoff spread
3 eggs
BUTTERCREAM
80g butter
40g Lotus biscoff spread
300g icing sugar
Dash of milok
STEP 1
Line a cupcake tin with cupcake/muffin cases.
STEP 2
Mix together the butter, caster sugar and Lotus biscoff spread.
STEP 3
Then add in your three eggs.
STEP 4
Once mixed together add in the plain and self raising flour.
STEP 5
Pour your mixture into the cupcake cases.
STEP 6
Bake in the oven on 140°C for 35-40 minutes.
STEP 7
Leave out, until they are fully cool before applying the buttercream.
STEP 8
To make the buttercream, mix the butter until it becomes pale.
STEP 9
Add in the icing sugar, and a dash of milk if needed.
STEP 10
Use a piping bag or spoon to apply the buttercream to the cupcake.
Top it off with a Lotus biscoff biscuit.
